In this hands-on workshop, you will discover the concept of "Umami"—the fifth taste—and learn how to recreate authentic Japanese dishes in your own kitchen.The experience begins with an introduction to dashi, the essential broth used in many Japanese dishes. You will compare different types of dashi made from premium kelp and bonito. Through tasting, discover how Japanese cooking builds depth and balance, even in simple dishes.Next, try shaving dried bonito flakes yourself—a rare hands-on experience even in Japan today.
